you can say "that’s latino measurements" while using Farenheit degrees. Every country in latin America, from Mexico all the way down to Argentina and chile use celsius degrees
Just made this bread, it didn’t come out as well as yours (it was kinda small, I think either it was the fast acting yeast or impatience) but it came out pretty airy and tasty
My wife does this at least every other week and its so disappointing when were out of bread and dont have time/energy to bake it and just buy it. Even the best store bought stuff doesnt compare to this basic recipe.

You’ve done all this work, just a bit more effort and it will be even better. Do more kneeding and let it prove for longer. You will still get an airy crumb, but the air pockets will be denser, more like regular sandwich bread, rather than the big holes here like ciabatta
